Seared salmon with caramelized onions
Despite his busy schedule, David was kind enough to whip up a very tasty, and by our standards fairly healthy, dinner of salmon with caramelized onions and mashed potatoes. I'm usually so smitten with cream sauces and things, much to the chagrin of my waistline, that I endeavoured to find a salmon recipe free of anything too fattening. Carol Ann Shipman's Salmon Cookbook provided a delicious recipe for us. David actually didn't deviate too much from the original, surprisingly, as he is usually one to relish taking liberties.First, sear the salmon in butter over high heat until mostly cooked and remove. Then, saute sliced onions and a bit of dill in butter until dark, then add bit of soy sauce, red wine vinegar and a bout 1/2 cup of white wine. Cook for a bit to thicken up, return salmon to the pan to heat through, and serve. Add David's classically good mashed potatoes, and it made for quite a lovely meal. David noted that he'd probably increase the amount of red wine vinegar (the recipe calls for 1 tsp), in order to bring out the flavours of the fish a bit more.
