Salmon bowls with mango avocado salsa

I’m not necessarily known for my health-eating, so if I can manage to find a fresh, healthy recipe with flavours I enjoy, it’s a win. I’m always on the look out for new salmon recipes, and this one, with its mango-avocado combination, looked like a refreshing take on a fish dish.

Recipe

Serves 2-4

1-2 lbs fresh salmon
2 tbsp brown sugar
2 tsp smoked paprika
2 tsp onion powder
1 tsp garlic powder
½ tsp chili powder
½ tsp salt
2 tbsp olive oil

Mango Avocado Salsa
2 mangos, diced
1 avocado, diced
¼ cup minced cilantro
¼ cup minced red onion
drizzle of honey
squeeze of lime juice
salt to taste

Preheat oven to 475 F. Line baking sheet with foil. Toss all salsa ingredients in a bowl to combine.

Mix spices and olive oil to make a paste. Place salmon skin side down on baking sheet. Rub paste liberally over top part of salmon. Bake for 6-12 minutes depending on the thickness of salmon and desired doneness. Serve salmon over rice, topped with mango avocado salsa.

Musings

This dish is delightful! It’s so fresh tasting, with a lovely blend of flavours. Sweetness from the mango, bit of creaminess from the avocado, and well-spiced overall. It’s also easy and quick to put together, making it a great weeknight option. Definitely a recipe I’ll be coming back to again and again.
