Baked Salmon with dill yogurt sauce

The past few months have involved an uptick in my physical fitness—running, weightlifting, and of course, many hours of dancing. So I’ve been on the look out for healthy recipes to incorporate into my diet, you know, to break up the mac and cheeses and burgers that so often characterizes my food intake.

Serves 4

4 4-oz salmon fillets
salt and pepper to taste
1 cup water + 1 tbsp kosher salt
6 oz plain non-fat Greek yogurt
½ tsp lemon zest
2 tbsp fresh lemon juice
1 tbsp chopped fresh dill

Preheat oven to 425 F and line a baking sheet with parchment paper. Whisk together water and tbsp of salt. Place the salmon fillets in a shallow dish and pour the water salt mixture over so that fillets are submerged in the liquid. Brine for 10 minutes then remove the salmon and pat dry with paper towel.

Place the salmon on the prepared baking sheet and sprinkle with salt and pepper. Bake for 10-15 minutes. While the salmon is baking, whisk together yogurt, lemon zest and juice, and dill. Remove salmon from the oven. Squeeze fresh lemon juice over top and sprinkle with fresh dill. Serve with yogurt sauce.

Musings

Simple to make and absolutely delicious! I was genuinely surprised at how moist the salmon was, and the dill sauce was fresh and flavourful. Served it with a side a mashed potatoes and garlic green beans—perfection!
