Honey mustard glazed salmon fillets
In an effort to eat at least mildly healthier, I bought a bunch of fresh salmon that happened to be on sale. Being a weeknight, I wanted a fast, easy and tasty recipe, and this looked to fit the bill.

2 tbsp lemon juice
2 tbsp Dijon mustard sauce
2 tbsp honey
2 garlic, finely chopped
1 tsp finely grated lemon zest
salt and ground black pepper
pinch of thyme
10 oz salmon fillet
Preheat oven to 400 F. In a small bowl, combine juice, mustard, honey, garlic and zest and stir together. Season salmon with salt and pepper and place in an oiled baking dish. Pour honey-mustard mixture over salmon. Bake for 10 minutes or until fish is fork-tender.
Musings
The dish was super quick and easy, making it a great option for a mid-week meal. It was also surprisingly tasty--a nice blend of tangy and sweet, but still allowed the salmon flavour to come through. I paired it with mashed potatoes and sautéed mushrooms. Delicious!
