Tuna melt
Sometimes a little bit of comfort food is necessary, and a good tuna melt fits the bill. This was the first recipe I tried out of Chrissy Teigen's Cravings cookbook, given to me before I left Chicago.

Serves 2
2 (5-oz) cans white tuna, drained
½ cup mayonnaise
⅓ cup finely diced onion
2 tbsp sweet pickle relish
1 tbsp Dijon mustard
½ tsp salt
¼ tsp ground black pepper
4 tbsp mayonnaise
4 slices whole wheat bread
4 slices tomato
4 slices cheddar or havarti
In a bowl, mix together tuna, mayo, onion, relish, mustard, salt and pepper. Spread tablespoon of mayonnaise on one side of each piece of bread. Melt butter in a skillet over low heat, and place two pieces of bread in the skillet, mayo-side down. Divide tuna mixture between the two slices of bread, topping with tomato and cheese. Place remaining slices of bread, mayo-side up. Toast the sandwiches until cheese is melted and bread is golden and toasty, 5-6 minutes per side.
Musings
Simple and straightforward to make, with super delicious results! I paired it with homemade tomato soup, making for a well-rounded meal. I could imagine experimenting with the tuna filling, perhaps throwing in a bit of celery, garlic or parsley to amp things up. A great weeknight dish that I'll be re-visiting in the future!
