Salmon with sour cream and dill
There are worse things I suppose than having an entire freshly-caught salmon to divvy up between the two of us. But in the interest of not having exactly the same recipe several nights in a row, it means I need to find different and interesting ways of serving up the salmon. A cursory Google search led to my finding this sour cream/dill recipe, oddly enough on About.com Southern Food.

from Southern Food About.comServes 2 2 salmon portions (3/4 lb; steaks or tail piece)1 tbsp fresh lemon juice1/4 cup chopped onion2 tbsp sour cream2 tbsp fresh dill, choppedsalt and pepperPreheat oven to 350 F. Place salmon in baking dish and sprinkle onion and lemon juice over top. Season with salt and pepper. Bake, uncovered, for about 20 minutes or until fish flakes easily with a fork. Remove from oven and spread sour cream over top. Sprinkle with dill and return to oven for 5 minutes.
Musings
Recipe simplicity does not necessarily equal simple taste. It was straightforward and quick to make but yielded delicious flavour. The combination of sour cream and dill, always a classic, with the fresh salmon made for a creamy yet light-tasting dinner. Obviously, the freshness of the salmon contributed greatly to its success. However, even with frozen salmon steaks, the sour cream would do well to moisten and liven things up.
