Apple walnut muffins
Nothing like a lazy Sunday to try out a new muffin recipe. I'd been eying an apple-walnut recipe in the Joy of Cooking for a little while. I can't recall having tried an apple muffin, but I do enjoy all of the primary components of this muffin: apple, walnuts, cinnamon. Why not try it? No time like the present.

from Joy of CookingMakes 12 muffins1-1/2 cups all-purpose flour2 tsp baking powder1 tsp baking soda1/4 tsp salt1-1/2 tsp ground cinnamon2 large eggs3/4 cup sugar1-1/2 cups packed coarsely grated or finely chopped peeled apples (about 2 medium), with their juices5 tbsp butter, melted1/2 cup chopped walnutsPreheat oven to 400 F. Whisk together thoroughly the flour, baking powder, baking soda, salt and cinnamon. In a large bowl, whisk together eggs and sugar. Stir in the apple and let stand for 10 minutes. Then stir in the butter and walnuts. Add flour mixture and fold just until dry ingredients are moistened. Do not overmix. Divide batter among muffin cups and bake for 14 - 16 minutes.
Musings
A note on preparation: The recipe didn't specify a type of apple, so I used granny smith apples.While they were baking in the oven, the smell wafting from the kitchen very much reminded me of apple pancakes with a little cinnamon on top. The muffins turned out quite tender, with a nice sweet flavour. The taste of apple wasn't overpowering (I suppose if I wanted a stronger apple flavour, I could add more grated apple), but it was a nice balance of flavours. A definite keeper of a recipe.
