Pie dough (my mother’s recipe)

2 cups all-purpose flour
2/3 cup butter, cold
1 tsp salt
5 tbsp ice water

Stir together flour and salt in a large bowl. Cut in cold butter pats with a pastry blender until the mixture resembles coarse meal. With a fork, make wells in the flour mixture and pour in a tablespoon of water into each well. Using a fork, mix the flour and water until moist clumps form. Gather dough into 2 balls and refrigerate for at least 30 minutes.
