Costco is great for many things, but bulk can be both a blessing and a curse. A giant 12 pack of cans of tuna left me searching for variations on the standard tuna sandwich (which would begin to get a bit monotonous after the 5 or 6th tin of tuna). I stumbled across this recipe on Allrecipes.com, and thought it combined many of our favourite flavours, including apples and walnuts.

1 6 0z-can tuna in water, drained
1/2 cup chopped apple
2 tbsp fat-free mayonnaise
2 tbsp finely chopped onion
1/4 cup finely chopped walnuts
1 tbsp sweet pickle relish
1/2 tsp sugar
1/4 tsp salt
1/8 tsp black pepper
4 slices of whole-wheat bread
In a bowl, combine first eight ingredients thoroughly. Spread on bread slices and serve.
A few notes on preparation: the original recipe called for a 1/4 cup of chopped celery, but we were out.
An easy recipe, I ended whipping up a double batch for David’s lunch today and tomorrow. David quite enjoyed it, commenting that it had a nice combination of tartness, sweetness and nuttiness. A good complement of flavours. He noted that a dash of red pepper flakes might liven it up a bit more. Otherwise, a solid, tasty, relatively healthy lunch.
